A small batch kombucha, Wunder-Pilz is a tasty cultured beverage produced by brewing and fermenting organic teas and herbs until the perfect balance of acidity and smoothness is reached. Wunder-Pilz is a dry, refreshing alternative to sugar laden drinks. Wunder-Pilz is sold exclusively on tap to maintain freshness, minimize our waste stream and to encourage reuse of existing containers. Whether you use/reuse your own bottles or ours, you can find our product on tap in and around Austin!

The aim of Wunder-Pilz is to consistently produce delicious beverages that mix the health benefits of kombucha with the specific energetic and healing properties of organic herbs. Founded in 2010, Wunder-Pilz Kombucha takes its name from a German word for kombucha. Wunderpilz translates literally to 'miracle mushroom'. (Pils with an 's' refers to a style of beer not a mushroom.)

We produce four main varieties:

Organic Lemon + Ginger

Our all organic Green Tea, Lemon Juice and fresh pressed Ginger kombucha is a simple, clean, enlivening and classic blend! Organic lemon juice is a good source of citric acid which is a major carrier of biochemicals in the body's energy system. Ginger has been approved by Germany's 'Commission E' (a regulatory agency for herbs) to ease indigestion and motion sickness. We source and juice the high quality organic ginger every week! Seasonally we add freshly picked and juiced prickly pear juice which is loaded with the same type of antioxidants found in beets!

Yaupon Holly + Hibiscus

Our all organic Yaupon Holly and Hibiscus Flower kombucha is made from the leaves of the native yaupon plant that grows along the Gulf Coast and has the distinction as the only caffeinated plant in North America. We harvest and roast these wildcrafted leaves ourselves in Bastrop just east of Austin. We source our organic Hibiscus flowers from Nile Valley Hibiscus, an Austin based company that we're very inspired by. Part of their proceeds go towards implementing heartfelt projects in the owner/founders community in the Nile Valley.

A recent USDA study showed that consuming hibiscus flower tea lowered blood pressure in a group of pre-hypertensive and mildly hypertensive adults. Hypertension is a condition in which blood pressure is chronically high, and it affects one-third of all U.S. adults.

Mate + Mint + Dandelion Root

An all organic blend of Yerba Mate, Dandelion Root, Mint, Gotu Kola, Goji and Spirulina makes this our most herbal variety with no fruit juice added! Yerba mate is a South American caffeinated tea and is packed with polyphenols! Dandelion root has a delicious taste and has historically been used to assist the liver and gallbladder. Gotu Kola might just bring you some mental clarity and focus. Spirulina is a natural green algae powder that is loaded with B-12, Beta Carotene, Protein and Iron. (As this formula contains Gotu Kola, women who are nursing and/or pregnant might want to avoid this one.) We source our delicious Yerb Mate tea from Guayaki, a company working to steward and restore hundreds of thousands of acres of South American rainforest and create over a thousand living wage jobs by leveraging their 'Market-Driven-Restoration' business model. We are proud to support their efforts by sourcing our organic yerba mate from them.

Twig Tea + Mugwort + Skullcap

Our all organic Twig Tea, Mugwort, Skullcap kombucha infused with organic vanilla beans will quickly bring your body and mind to rest and may foster vibrant dreams! Twig tea is naturally low in caffeine, is rich in natural tannins and loaded with powerful catechins. Mugwort is often linked with increased dream recall. Skullcap and Mugwort are emmenagogues and pregnant women should avoid ingesting any emmenagogues. Vanillin in Vanilla is a powerful polyphenol and Vanilla has been traditionally used to promote a sense of calm and it has a soothing smell and taste!
