A small batch, dry, fully fermented, non-alcoholic kombucha, Wunder-Pilz is a tasty cultured beverage produced by brewing and fermenting organic teas and herbs until the perfect balance of acidity and smoothness is reached. Wunder-Pilz is a dry, refreshing alternative to sugar heavy kombucha. Each pint contains less than 20 Calories and less than 5 grams of sugar. This is a big deal to us! Wunder-Pilz is sold exclusively on tap to maintain freshness, minimize our waste stream and to encourage reuse of existing containers. Whether you use/reuse your own bottles or ours, you can find our product on tap in and around Austin!

Made with native Yaupon Holly (a close relative of Yerba Mate) we pick and roast ourselves, our goal at Wunder-Pilz is to consistently produce delicious fermented beverages that are low in processed sugar and packed with nutritious fruits and herbs. Founded in 2010, Wunder-Pilz Kombucha takes its name from a German word for kombucha. Wunderpilz translates literally to 'miracle mushroom'. (Pils with an 's' refers to a style of beer not a mushroom.)

We produce four main varieties:

Organic Prickly Pear + Lemon + Ginger

Our wildcrafted Prickly Pear, Lemon Juice and fresh pressed Ginger kombucha is a simple, clean, enlivening and classic blend! Organic lemon juice is a good source of citric acid which is a major carrier of biochemicals in the body's energy system. Ginger has been approved by Germany's 'Commission E' (a regulatory agency for herbs) to ease indigestion and motion sickness. We source and juice the high quality organic ginger every week! We also add freshly picked and juiced prickly pear juice which is loaded with the same type of antioxidants found in beets!

Yaupon Holly + Tart Cherry

Our all organic Yaupon Holly and Tart Cherry kombucha is made from the leaves of the native yaupon plant that grows along the Gulf Coast and has the distinction as the only caffeinated plant in North America. We harvest and roast these wildcrafted leaves ourselves in Bastrop just east of Austin. We use orgnaic Tart Cherry juice that's not from concentrate! Tart Cherry juice is a powerful anti-inflammatory and antioxidant and tastes great!

Pineapple+Ginger+Mint

An all organic blend of Yaupon Holly, Ginger and Pineapple Juice. Pineapple juice is loaded with Vitamin C, Manganese and is rich in antioxidants and a natural sweetener. Ginger has been approved by Germany's 'Commission E' (a regulatory agency for herbs) to ease indigestion and motion sickness. We source and juice the high quality organic ginger every week! Peppermint may relieve cramping, improve energy, relieve headaches and help digestion.

Twig Tea + Mugwort + Blueberry

Our all organic Twig Tea, and Mugwort kombucha will quickly bring your body and mind to rest and may foster vibrant dreams! Twig tea is naturally low in caffeine, is rich in natural tannins and loaded with powerful catechins. Blueberry juice is rich in polyphenols/antioxidants, Vitamins C and K and manganese and may help control blood sugar and blood pressure! Mugwort is often linked with increased dream recall and may have a relaxing effect on the nervous system as well! Mugwort are emmenagogues and pregnant women should avoid ingesting any emmenagogues.
